These schnitzels are way less effort than you think. With a yummy, healthy meal on the table in 20 mins, the whole family will be happy! You can make your own breadcrumbs using 2 slices of day old bread or use store bought.
Ingredients
2 medium potatoes, peeled and cut into cubes
1 tbsp milk of choice
2 tsp butter
300g pork sizzle steaks or pork loin steaks
1 cup bread crumbs
1 egg, whisked
¼ cup plain flour
1 tbsp extra virgin olive oil
1 bunch broccolini, steamed or boiled

Method
- Bring a medium saucepan of water to the boil. Cook the potato in the boiling water until easily pierced with a knife, approx 10 minutes. Drain and return to the saucepan. Add the butter, milk and season with salt and pepper, then mash until smooth.
 - Meanwhile, prepare the schnitzels. If using pork loin steaks, flatten steaks by placing between baking paper and hitting with the back of a rolling pin or a meat tenderizer.
 - Place breadcrumbs, egg, and flour into 3 separate shallow bowls.
 - Dip pork into flour, followed by egg mixture, then into breadcrumbs.
 - Heat a nonstick frying pan to medium-high with extra virgin olive oil.
 - Cook pork for 2 minutes on each side or until cooked through and golden.
 - Serve with mashed potatoes and steamed greens.
 
Notes:
- To make dairy free swap milk and butter for dairy free alternative
 - To make gluten free and low FODMAP use GF flour and GF breadcrumbs
 - This recipe also works well in the air fryer!
