2 spring onions, sliced
120g goats cheese
1 zucchini, peeled into ribbons
200g smoked salmon
2 tbsp chopped fresh dill

Method
- Preheat the oven to 180C and spray a baking dish with olive oil.
- Combine the eggs, egg whites, salt, pepper and flour in a bowl. Whisk to combine.
- Stir through the spring onion and approximately ⅔ of the cheese.
- Pour the egg mixture into the baking dish. Lay the zucchini ribbons on top of the mixture and push gently into the liquid to cover.
- Place the smoked salmon and extra cheese on top of the mixture and sprinkle with dill. Place into the oven to cook for 30-40 minutes or until cooked through.
- Serve with salad if desired.
Notes:
- The goats cheese can be substituted for normal feta if preferred.
- To make low FODMAP use the green parts only of the spring onion
