Pop this all in the slow cooker before heading off to work and you’ll come home to the most incredible smelling house, and the most delicious dinner.
Ingredients
1tsp extra virgin olive oil
1kg lamb, diced and trimmed
1 brown onion, finely sliced
⅓ cup massaman curry paste
2 cloves garlic crushed
1 cup beef stock
270ml light coconut milk
750g baby potatoes, halved
1 cinnamon stick
1 tbsp fish sauce
1 cup raw basmati rice
2 bunches broccolini
200g green beans
½ bunch coriander leaves finely chopped
¼ cup crushed peanuts

1 cinnamon stick
1 tbsp fish sauce

200g green beans
½ bunch coriander leaves finely chopped
¼ cup crushed peanuts
Method
- Heat oil in a large saucepan over medium - high heat. Add the lamb in batches and cook for 3 minutes or until browned. Remove from the pan and set aside. Continue with remaining lamb until all lamb has been browned.
- In the same pan, add the onion and fry for 1-2 minutes. Add the curry paste and garlic and turn the heat down to medium. Cook for 2 minutes or until fragrant.
- Transfer the onion mixture to a slow cooker and add the lamb and its juices, beef stock, coconut milk, and potatoes. Gently toss to combine.
- Add the cinnamon stick and fish sauce to the pot and stir.
- Place the lid on the slow cooker and cook on high for 4 hours or low for 6-8 hours.
- Prior to serving, cook the rice according to package directions.
- Steam the broccolini and green beans.
- Taste the curry and add 1 tsp of sugar if required for extra sweetness (this will depend on the curry paste you’ve used).
- Serve the curry with rice, greens and top with coriander and crushed peanuts.
