This meal makes a fun dinner when feeding a crowd. Bulk prepare the mince, place the noodles, mince and toppings on serving platters and let everyone make their own.
Ingredients
200g vermicelli noodles
1 tbsp extra virgin olive oil
3 cloves garlic, crushed
1 tbsp ginger, grated
4 spring onions, sliced (plus extra for serving)
500g lean pork mince
225g canned water chestnuts, drained and chopped
1 zucchini, grated
2 tbsp soy sauce
2 tbsp oyster sauce
1 tsp sesame oil
8-12 iceberg lettuce leaves
Bean shoots, sliced chilli, lime wedges and coriander for serving

Method
- Cook the noodles according to packet instructions.
- Heat the oil in a wok or large fry pan. Add the garlic, ginger and onion. Stir for a minute.
- Add the pork mince and cook for 2-3 minute, stirring occasionally.
- Add the water chestnuts and zucchini and stir to combine.
- Stir through the soy sauce, oyster sauce and sesame oil. Add the vermicelli and mix to combine, and then transfer to a large bowl for serving.
- To serve, place the lettuce leaves on a plate along with the bean shoots, chilli, lime, and coriander. Fill each lettuce cup with the pork mixture and top with extras.
Notes:
- To make low FODMAP, substitute the fresh garlic for garlic infused extra virgin olive oil and only use the green parts of the spring onion.
- Always check your sauces are gluten free if required!
