Ingredients
2 large zucchini, diced
2 red capsicums, sliced
1 medium red onion, cut into wedges
400g tin of chickpeas, rinsed and drained
2 cloves garlic, crushed
1 tsp dried oregano
1 tbsp extra virgin olive oil
1 tbsp balsamic vinegar
300g halloumi, sliced
120g bag leafy mixed greens
2 red capsicums, sliced
1 medium red onion, cut into wedges
400g tin of chickpeas, rinsed and drained

1 tsp dried oregano
1 tbsp extra virgin olive oil
1 tbsp balsamic vinegar
300g halloumi, sliced
120g bag leafy mixed greens
Method
- Preheat the oven to 200’C.
- Place the zucchini, capsicum, onion and chickpeas into a large baking dish with the garlic, oregano, olive oil, and balsamic vinegar. Season with salt and pepper and toss to coat. Place into the oven to cook for 10 minutes.
- After 10 minutes, remove the tray from the oven and add the sliced halloumi. Return the tray to the oven to cook for a further 10 minutes or until the cheese becomes golden. Remove the tray from the oven and serve with mixed green leaves.
Notes:
- To bulk this meal up toss cooked brown rice or quinoa in with the roast veg and haloumi before serving
